Chocolate Mint French Silk Brownies

I made these brownies for a birthday celebration for my mom - who loves chocolate mint anything and they did not disappoint! They were chocolatey, creamy, rich and delicious. My kids also loved unwrapping all of the Andes candies.




To start, simply make a box of brownies according to the package instructions. This step is a lot more fun if you have two "helpers" to crack the egg, add the ingredients and "help stir."

Next, bake the brownies according to the package instructions and allow to cool completely.

Once you are done making your brownie layer, you need to start your ganache and mouse layers. For the ganache, combine 12 of the Andes candies and 3/4 cup of the whipped topping in a bowl. Microwave on high for 30 seconds, or until melted and smooth. Continue to microwave in thirty second increments, stirring every 10 seconds. Set aside.


For the filling, microwave 36 Andes candies and 1/2 cup of the whipped topping in a bowl for 30 seconds. Follow the same process as above, continuing to microwave and stir in ten second intervals until melted and smooth.


Finally, you want to beat the 8 ounces of cream cheese until fluffy and smooth 3-5 minutes. Yes, you will have a lot of bowls and a big mess on your hands at this point. It is worth it, I promise!

Add the chocolate mixture, peppermint extract and vanilla and mix until combined. Fold in the remaining whipped topping.

Spread this mixture over the cooled brownies.

This dessert may not look the prettiest, but I promise it is worth it.
