If you are like me, you had more than your fair share of rich food this Holiday season. I'm looking forward to cooking some "regular" meals in the new year. I figured I would get us moving in the right direction with this easy and relatively healthy crock pot meal.
For those of you that don't know, "Marry Me Chicken" gets its' name from the idea that the meal is so good, whoever you serve it to will ask you to marry them. I can't attest to that fact because I only served it to my husband after we were married. I can, however, say, that this is a family favorite recipe. I chose to serve it today simply with some homemade biscuits.
To make this, start by browning your chicken in a pan on the stove to develop some flavor. Then transfer your chicken to the crock pot.
Mix together the ingredients to form a sauce. Make sure you use low sodium chicken broth as your liquid in this. I have made the mistake of using regular chicken broth before. Because the sauce reduces over the course of several hours, the flavor concentrates and this will become too salty if you use regular stock.
Then pour the sauce mixture over the chicken. Add your sun dried tomatoes at this stage.
Cover and cook on low for 5-6 hours. I had chicken tenders on hand to make this today instead of chicken breasts, so they cooked slightly less time. I simply kept checking to make sure I did not over cook them.
