Sausage and Gravy Biscuit Casserole

This sausage and gravy biscuit casserole has become our go to Holiday breakfast in my family. It is stick-to-your ribs goodness to provide fuel to start a day filled with Holiday celebrations.

The genesis of this recipe was my quest to find a Holiday egg casserole that my whole family would like. The one I grew up eating was not a favorite amongst my family. When I saw a recipe for sausage and gravy biscuit casserole, I knew I had a potential winner on my hands. It turns out I was right. I have made this a few times now and my family loves it. They have decreed that it is the egg casserole they want made for Holiday mornings, and I am only too happy to oblige.

I chose to make homemade biscuits as the foundation for this casserole because my kids like any excuse to get a gadget out. In this case, the food processor. I used my go to recipe for flaky buttermilk biscuits and tiny hands made quick work of them. However, you can certainly opt to use canned biscuits.

After making and 1/2 cooking the biscuits, I moved on to the sausage gravy. I browned turkey sausage and made gravy as you typically would for biscuits and gravy. I did not grow up eating this, so I'm not incredibly familiar with what texture the gravy should be. However, my husband did and is happy to lend his eye to make sure this turns out right.

After making the gravy, I poured this over the biscuits. Then whip together the eggs, milk and salt and pepper in a bowl.

Egg and milk mixture

Pour the egg mixture over the biscuits and gravy. Then top with the shredded cheddar. I shred my own blocks of cheddar as I find it makes a big difference in taste and texture and is worth the extra effort (plus, my husband does the grating, so it isn't my effort!).

Finished casserole -ready to bake

Bake until the biscuits finish baking and the eggs are set. Then enjoy this hearty breakfast. A great way to start any Holiday!
